Pulled pork and cheese puff pastry

If you are going to make pulled pork, we always recommend smoking a few kilos more. this way you have some leftovers. You can use it to build an extensive hamburger, for nachos in a skillet or for these puff pastry snacks. A tasty snack for a party.

If the pulled pork comes out of the freezer, give it enough time to come to refrigerator temperature. You can freeze the snacks for later use if you want to make these pulled pork snacks the same day or a day after the pulled pork session. Always useful!

The amount of ingredients for this snack depends entirely on how much pulled pork you have left. If you don’t have enough, you can put a few slices of puff pastry back in the freezer. Do you have pulled pork left….. Then you eat it.

How do you warm up pulled pork

Place the piece of pulled pork wrapped in aluminium foil in a roasting pan. Warm it up until the meat feels less firm, and it is easier to “pull” it. The meat can be heated upfront until the grill has reached the right temperature. The meat will then slowly warm up.

Pull the meat apart in the roasting pan. It is wise to do this with your hands and with gloves on. We will pull the pork as fine as possible to make it easier to fold into the puff pastry. It may therefore be necessary to slice the pulled pork smaller with a knife.

When the pulled pork has been pulled into smaller pieces, you can mix your barbecue sauce with it. Add a little more than you are used to. You do want to taste the pork in the snack. If necessary, you can dilute the sauce with cola or apple juice. Stir the sauce through the meat until you have a smooth pulled pork.

Because the thin puff pastry slices can thaw quickly and are more difficult to process, it is helpful to take one piece at a time from the freezer. Cut the slice in the middle to create two rectangular slices. Slightly wet one side with a brush so that the edges adhere well later. Place some pulled pork on one half of the puff pastry and some grated cheddar on top. Keep it about an inch from the side.

Fold the puff pastry in half and make sure that no pulled pork sticks out. Gently press the three sides and then push with a fork along the edge for good adhesion of the puff pastry.

The pulled pork snack is now done. If you will make a stash, place the folded copies on baking paper in the refrigerator. If you use them much later, you can store them like this in a ziplock bag in the freezer.

In this case, we will bake them immediately, and then we have to do one more action. Top it off with barbecue sauce. To do this, put some of your favourite sauce in a bowl and dilute it slightly with apple juice. Brush the top of the puff pastry and then sprinkle with some sesame seeds.

At 220°C (428F) on the thermometer in the kettle, they can go on the pizza stone. It is helpful to use a hamburger spatula for this. Close the grill and think about what to drink with these snacks…. Unless you have already started!

Check after ten minutes/quarter and move or change them if necessary if the heat distribution is not ideal in the barbecue. The baking time will be about 15-20 minutes and when they are nicely browned, scoop them off the pizza stone with your spatula.

  • Frozen puff pastry
  • Favourite barbecue sauce
  • Apple juice or cola
  • Grated cheddar
  • Sesame seed

Instructions

  1. Prepare the grill for 220 degrees (428F) indirectly with a pizza stone.
  2. slice the pulled pork into finer pieces.
  3. Dilute the barbecue sauce with cola or apple juice and mix it with the pulled pork.
  4. Cut the square puff pastry into two rectangular pieces and brush one side of the dough with water. Place about a tablespoon of pulled pork on one half.
  5. Add half a tablespoon of grated cheddar cheese on top of the pork.
  6. Fold the puff pastry in half, press the three sides and push it extra with a fork.
  7. Brush the top with the diluted barbecue sauce and ad some sesame seeds.
  8. Place the pulled pork snacks on the pizza stone and close the barbecue. They will be a nice golden brown after about 15-20 minutes.
